Many people have been abusing the ability to read books and know things, remember folks, if you want to know some esoteric, or rare information you will need to have the Lore's to back it up, or have run into it in game to know about them.
Rituals - Lore (Insert Clan), for clan specifics. Occult Libraries will give you hints about certain things, but they are NOT books of spells.
Combo-disciplines - Lore Kindred, or Clan depending on if it's a clan specific, rare ones might require higher levels of ability.
Ghost stuff - Lore Wraith, or Lore Spirit (these are different, and they are different for a reason).
As a note, this gives you a reason to know OF the information in question, it does not give you the ability to learn them without some research or a teacher.

That's all well and good, but could you please expound on what makes it worth buying higher levels in them? For instance, if I have Assamite Lore 1, I can see why I would buy Demon or Tremere Lore, but what advantage do I have in buying to 2 or higher?

Other then good roleplay for claiming in depth knowledge of clans, (yes even your own clan without any lores you are just some yutz who happened to be embraced into it), there are also combo disciplines, rituals, knowledges of who might be moving and shaking in the storylines. There are a whole hell of a lot of things that PC's just don't know because no one has the lores, and some of the ones that should be considered most common are actually the most rare. You heared someone drop a name of some powerful Cam you wanna go punk? Wouldn't it be nice to know some fat, juicy rumors about him, either through Kindred Lore, or clan specific lores?
The more rare or powerful the power is you want to dig up, the more lores you would have required to even know it was out there to purchase.
I know some people are going to bring up background stories, and why they should know it because they wrote a background saying they have this knowledge, or that power, or this magickal hoozimagigger. Backgrounds do not grant you power, knowledge or toys. Backgrounds do give you the ability to gain some Alpha or Beta points, and allow you to spend points on otherwise restricted lores, disciplines, or toys.
And to possibly pre-empt this question, yes, in game play can and will trump background stories, and sometimes even grant things without cost, though this will almost always be in the realm of items, and sometimes backgrounds. VERY occasionally, something you do will grant abilities, traits, or even disciplines (new or increased).
